Will it break if we upgrade our current API version to the latest? Right now our existing Stripe API is several years behind.

Hello Chris,
When you upgrade stripe version, you have I believe you will get some time to test and rollback if you ran into any issue. so I suggest you give it a shot.
however we are using the latest stripe version when testing so we doubt running into an issue
